Gnocchi di Molche – Whey Noodles

(noodles made from the remains of pressed olives)

Ingredients for 6 persons

Whey is the meaty remains of the first olive-pressing, used for cold-pressed olive-oil production, and therefore saturated with oil. It can be replaced with an alternative, olive paté, available everywhere in Italy.

1 kg floury potatoes (suitable for mashed potatoes)

0,3 kg wheat flour

2 eggs

2 tablespoons whey or black olive paté

1 kg tomatoes or ready-made mushed/pulped tomatoes

0,1 lt cold-pressed olive oil from Trentino

Padan cheese, from Trentino

salt

pepper

garlic

fresh basil

Preparation

Boil the peeled potatoes in salted water.Stir through a sieve, add the salt, 0,3 wheat flour and 2 eggs. Add 2 tablespoons of whey or black olive paté. Knead well by hand, you will need a little time and patience. Prepare the mixture into a thin, pigtail-like form, and cut into small pieces about the size of a half walnut. Boil in salted water, and let drain.

Prepare a simple sauce: scald together fresh, pulped tomatoes - dressed quickly with cold-pressed Trentino olive oil, garlic and fresh basil. Over this, sprinkle grated Padan cheese from Trentino.
